Finally on our list is another decadent dessert that’s loved among many. Our version of Creme Brûlée offers a delightful twist on this classic dessert, infusing the aromatic essence of Magic Nights tea into a creamy custard base. This elegant dessert, with its rich flavours and delicate texture, is the perfect addition to your Eid festivities, which will captivate your senses and leave a lasting impression of Eid joy and culinary excellence.


Ingredients:


02 teaspoons of Magic Nights

04 egg yolks

02 cups of heavy cream

½ cup of sugar + more for sprinkling

01 teaspoon of sugar

Pinch of salt


Directions:


Start by preheating the oven to 160 degrees Celsius.


In a medium-sized pot, gently simmer the heavy cream.


Remove the pot from heat and add vanilla extract, a pinch of salt, and tea leaves. Allow it to steep for 10 minutes.


After steeping, strain the cream mixture through a sieve to remove the tea leaves.


Next, in a large mixing bowl, whisk together egg yolks and sugar until the mixture becomes light and fluffy.


Slowly pour half of the hot cream tea mixture into the egg mixture while whisking vigorously to temper. Repeat with the remaining cream mixture, ensuring a smooth incorporation (pour slowly to prevent cooking the eggs).


Prepare a water bath by boiling 3 cups of water in a kettle or pot. Place ramekins in a deep-edged sheet pan and carefully pour boiling water halfway up around the ramekins, avoiding splashing.


Divide the tea custard equally into four ramekins and bake at 160 degrees Celsius for 45 minutes.


To check if they are done,, gently nudge the custards. The centre should jiggle slightly while the sides are set, indicating that the custard is just barely set in the centre.


Cool the custards in the refrigerator for at least 3 hours or overnight.


To serve, sprinkle 1 teaspoon of sugar evenly over the top of each custard. Use a torch to brûlée the sugar until it caramelises to a deep golden hue, forming a charred brittle.


Allow the sugar to harden for about 30 seconds before serving. Enjoy the creamy, tea-infused custard with its delightful caramelised topping!
